Good cookery depends on good ingredients, and so finding suppliers and producers who take great care in producing and distributing food is of paramount importance to us. Although the majority of the food we serve is organic, we do not adhere militantly to the concept, but believe that small sustainable and ethical businesses can produce just as good food without needing to be officially certified. We are equally concerned with sourcing produce that has been grown or made locally, ecologically and is available only when the seasons decide.

When an ingredient can only come from abroad, we find suppliers who show commitment to sustainable practices and ethical trading principles. If we can find and use an alternative British ingredient, we always will.
